Cargill, an American global food corporation based in Minnetonka, Minnesota brought something new to the table at Fi Europe 2023 in Frankfurt. These included post-biotic-rich plant-based fruit gums. Postbiotics are by-products that are created when probiotics feed on prebiotics. When cereals or fresh fruit are eaten, the fibre in them are the prebiotics. The microorganisms in the gut probiotics then break down the fibre and convert it into metabolic products called postbiotics. Specifically, it was about EpiCor® postbiotic, a dried yeast mentate that can support the immune system and intestinal health, as has been proven in more than a dozen published studies. The fruit gums can then also be enriched with other ingredients such as vitamins and minerals. This strategy was also implemented and was convincing in the variant with ginger and takes into account the fact that 44% of consumers prefer to choose a sustainable option.
