Trend spotting with the ZDS


The confectionery industry has very clearly defined trends and dynamics in product development. The consumer also wants to find global trends such as sustainability, health & wellness and stable quality standards in the confectionery sector. The ZDS offers a variety of seminars dealing with the latest developments and aims to promote the further education of professionals and thus support the confectionery industry.

The seminar “Fruity Sweetness from the Cocoa Fruit” on 16 March 2023 offers a detailed introduction to the use of the cocoa pulp as a natural sweetener to create a fruity taste and reduce conventional sugar consumption. The ecological significance of the holistic use of the cocoa fruit in terms of sustainability is also addressed.

The two-day web seminar “Basics for plant operators” (22 to 23 March 2023) is about setting up production plants more efficiently and sustainably. Participants learn tools to systematically identify and address errors and to present solutions constructively.

To ensure quality standards, the ZDS offers an introductory internship in the area of fine baked goods (4 to 6 April 2023). Participants will learn everything they need to know about production, including the use of raw materials, the classic processing procedure and manufacturing issues.

The English online seminar “Functional Confectionery: Focus on CBD, THC and Hemp Products” deals with trends in the health and wellness segment, innovation potential in the confectionery sector, legal challenges and product development with a focus on the substances CBD, THC and hemp as ingredients.

The ZDS training courses focus on excellent speakers, up-to-date topics and the chance to exchange ideas with experts and colleagues from the industry. The events are a combination of theory and industry practice.
