Natural colour pigments offer high stability


Colour plays a key role in the visual appeal of confectionery, and consumers increasingly expect food colouring to stem from natural sources. For this reason, Capol’s primary focus is on showcasing the potential of its Vivapigments range of natural colour pigments. These pigments are manufactured using a special process: Natural extracts are encapsulated in a rice protein matrix, creating natural colour pigments with a high stability against light, heat and oxidation.
