HDM: conching technologies in the spotlight


Hamburg Dresdner Maschinenfabriken (HDM) and its sister company MacIntyre provide the cocoa and chocolate industry with any technology needed in the ­value-added chain between the receipt of cocoa beans and achieving chocolate masses, compounds or fillings. As a result, usual interface problems are excluded from the very beginning.

The delivery range for cocoa processing includes key components such as winnowing, alkalizing, sterilizing, roasting, grinding, pulverizing and pressing. Both, cocoa bean and nib roasting systems, are available. In chocolate production, systems are offered for dosing, mixing, pre-refining, five-roll refining and conching.

As focus topic for ProSweets Cologne, HDM will ­present its various conching technologies. The PVS Conche will be highlighted on the stand. Due to its unique mode of operation, this system is particularly suitable for the ­processing of premium chocolate mass. Additionally ­presented is the MacIntyre refiner/conche (image), a technology that allows to combine the process steps of mixing, refining and conching in one single machine.
