Olam launches innovative dark cocoa powder


At FiE trade fair, Olam Cocoa has showcased the innovative premium cocoa powder deZaan D11BK. According to the producer, this is the first ever nib alkalised black cocoa powder that provides both an intense cocoa flavour and a very dark colour, without added sodium.

“Excessive salt intake is a serious health concern globally, with the ­majority of it consumed unknowingly in processed foods,” said Rinus Heemskerk, Global Head of Product Development & Innovation. “Unlike other dark cocoa powders, which are typically processed using sodium ­alkalising agents, D11BK uses potassium instead.” Thus, the sodium in the formulation is reduced while the flavour and colour impact be-nefits of a typical dark cocoa powder is maintained.

“We are committed to helping our customers find ideal ingredient combinations that deliver rich flavour and colour impact but that also meet growing consumer demand for healthier products which offer ‘permissible indulgence’ experiences”, explained Rinus Heemskerk and ­added: “Our new cocoa powder is well suited to deliver against this.”
