Thanks to a more powerful drive system, the Rollfix prime dough sheeter from Fritsch can handle dough portions of up to around 20 kg. A double spindle on the infeed roller provides even more power and, together with the selectable infeed speed, allows greater rolling degrees. The intuitive control concept makes the machine easy to operate. The roll-out programmes can be created quickly and easily and saved clearly with the corresponding product image and name. The stainless steel construction not only results in a high level of robustness, but also very good hygiene properties. In addition, a vacuum application for cooling baked goods will be presented, which can be integrated into thermoforming packaging machines and enables sensitive baked goods to be packaged without compromising on quality. Immediate packaging after baking means that products can be kept fresher and have a longer shelf life. Energy costs for product cooling can also be saved and production capacity increased thanks to shorter baking times. Last but not least, the solution is characterised by its small footprint in the bakery.
