Why do we like sweet fruit gums, soft cookies, or melting chocolates? The irresistible taste is argument number one. It's mood food. And: It is also fun, as the Austrian family business with around 350 employees reports.


This was esarom’s motto at ProSweets Cologne. The family-owned Austrian company with around 350 employees creates and produces flavouring ingredients for the beverage and food industry worldwide.

The lettering “Mystery Gums” allured from afar. Curious visitors approached the stand and suddenly immersed into the multifaceted world of flavours. Even sensory-trained palates were challenged. Just when you thought "The red one tastes like strawberry!", the next moment you were surprised by a new flavour nuance, and the guessing continued.

The colourful Mystery Gums are eye-catching. They are exciting, they are fun. They are a real taste experience.

The heart of the Mystery Gums are the Mystery Flavours. Creations by the esarom flavourists. Composing flavours that focus the fresh, juicy fruit, or evoke a hint of fruit peel, or bring green, earthy, woody notes, that's their daily business. The fine-tuned noses and trained palates of the esarom flavourists are part of creative minds who also like to use their knowledge in a playful way. Flavour compositions that unfold in the truest sense of the word as you enjoy them, allowing you to taste different nuances and surprise you. That was the idea. By the way: Confectionery manufacturers can obtain Mystery Flavours for testing in their own product development.

During the internal presentation of the Mystery Flavours in the form of kind of flavoured water – a standardised water-sugar-acid-solution that is used to taste flavours professionally – Nataliia Vodrazka, esarom Business Development Confectionery, was immediately excited. Martin Pusch, esarom’s expert in technology and innovation in the confectionery sector, was infected by the enthusiasm and immediately developed a new fruit gum recipe for the Mystery Flavours. With a slightly different texture, a different "bite", as we experts say, to bring out the flavours in more details. After a few test runs, the Mystery Flavours were ready for the market as "Bright Colourful Mystery Fruit Gums".
