Chocotech focusses on princesses


Chocotech, a subsidiary of Sollich KG, will be presenting the Princess®Jellymaster® system, among other things. This includes a mixing vessel with a jet dispersing system for processing all hydrocolloids used in the confectionery market, a slurry dosing pump for feeding the Sucrotwist® cooker and pressure dissolver, as well as a vacuum chamber including a vacuum system for producing a wide range of jelly variants. The system is controlled by a PLC and, like all Princess® laboratory cookers, is designed to meet the requirements of production. In this special configuration, a jet cooker with direct steam injection (DSI) for the production of high-amylose starch products is also integrated into the process.

The universal Princess Candy batch cooker, also on show, has been developed to cover a wide range of cooking process applications on a laboratory scale or for smaller test productions, with a batch size of 5 kg. This cooker with a PLC control can be used in a variety of ways, for atmospheric cooking, pressurised cooking, pressure release processes, vacuum cooking, heating, cooling and aeration by adding the Princess®Turbowhip® batch whipping system.
