Krüger & Salecker: Fast track to fruit gummies with FFW technology


Gummies within 12 s, precisely formed, without additional ripening times – in a fully automatic solution, starting with volumes less than 500 kg/h or batches from 10 kg. This is what the FFW technology from Krüger & Salecker (K&S) does. The machine builders presented their method for the first time at interpack trade show. Managing Director Sören Bettex: “The response was huge.”

Special feature: The compact systems are designed to process viscous formulations with – compared to existing starch or starchless processes – a very high viscosity. They are filled into rotating moulds at temperatures below 85 °C and reach a solid state in less than 12 s. The products can be directly post-processed and packaged.

Advantage if sensitive ingredients are to be added: They are exposed to elevated temperatures for less than 30 s. „This is a door opener for completely new concepts in the field of functional food and OTC products,“ stresses Sören Bettex and adds on the subject of cleaning: “There are four components that come into contact with the product. They can be removed and cleaned quickly. Cross-contamination of different recipes is no longer an issue.”

The FFW technology is developed and marketed in cooperation with manufacturers of peripheral technologies. There is a close cooperation with the machine manufacturer Hansella which supplies a dosing unit and an optional cooking system. For recipes, there is close cooperation with ingredient expert Döhler. Sören Bettex: “Together, we have achieved fantastic results in the laboratory.” However, cooperations are not exclusive. The FFW can also be combined with equipment from other manufacturers.
