Versatile system technology for bakeries


Handtmann recently showed new system technology for producing a wide variety of baked goods at Südback trade fair in Stuttgart/Germany – from free-sliding wheat bread to loaf bread, from small baked goods to snacks and pastries. The basis is formed by portioning machines which, in combination with attachments, can be used flexibly for dividing dough, dosing or shaping baked goods. All the system solutions presented were characterized by high product quality and weight accuracy, which is a significant economic advantage, especially when expensive raw materials are used.

The solutions presented are suitable for the flexible processing of a wide variety of dough consistencies or product masses and thus for a versatile product range. The MPE manual portioning unit, in combination with a VF 608 B portioning machine, divides doughs economically and accurately to the gram. This represents a considerable cost advantage, especially for doughs or masses with a high raw material input. The dough dividing process is possible without separating oil and flour.

The MSE 441 manual shaping and cutting unit is also suitable for use in conjunction with a Handtmann portioning machine to produce shaped products. Whether doughs or other pasty or viscous consistencies: The scope for portioned, shaped and cut products accurate to the gram is very large. With this modular solution, the product mass is pre-portioned by the portioning machine and fed to the MSE 441 cutting device. Shaping is done by a format insert. Cutting is possible either via a manually operated knife or a wire cutter, depending on the product mass.
