At Franz Haas Wafer, sustainability is more than just a word, and so the company developed its new Eco Principle. The Eco Oven uses a new operating principle and a new burner type, which enables production using less energy and producing fewer emissions.
The working principle is based on a proven concept: at the oven front end, wafer batter is deposited onto the lower plates of heated baking plate pairs, which are mounted to a baking tong chain. Then, the baking plates close and travel through the oven. After one turn, the baking plates open again at the oven front end. The baked wafer sheets are taken off and transferred to the next machine downstream.
Yet, contrary to conventional systems, the new Eco heating comes from the top via a new burner system (image). These burners generate a higher baking room temperature and are positioned above the baking plates. This position secures a cleaner inside of the oven, since baking waste does not fall onto the burners. The burners also produce a higher baking temperature, which enables an optimised baking time. The heating can be individually adjusted for each segment of the oven, creating a constant temperature distribution in the baking plates. Thus, constantly high quality wafer sheets can be produced. So the Eco Principle allows more output by saving energy and protecting the environment.
