Special cocoa & chocolate: LCM offers high-performing enrobing machine
LCM Schokoladenmaschinen GmbH offers a range of machines that are individually tailored to the different customer needs and are constantly being further developed according to the requirements and wishes of the customers. “In recent years, we noticed that customers increasingly want to enrobe large products, such as cakes, biscuit cuts and the like, and thus, a greater tempering and conveying capacity is required,” says Markus Leute, one of the two managing partners. “That’s exactly why we have launched a further development of our enrobing machine with fully automatic continuous temperature control: the LCM ATC-P, an enrober with a booster pump.”
Due to the booster pump, the delivery capacity of the enrober is increased by a multiple compared to the LCM ATC models previously available. In addition, the continuous tempering capacity increases to over 100 kg/h. Technically, this is achieved by the additional storage of tempered couverture. From this supply, the chocolate for the coating is conveyed. By means of an overflow system, unused chocolate is returned to the tempering unit.
“Our customers want a quick change of couverture, combined with an easy cleaning of the entire system,” states Markus Leute. “As with all other LCM machines, we have also realized this with the LCM ATC-P.” Both the storage tank and the tempering unit can be emptied via a drain and completely cleaned with hot water. The enrobing grid belt and the booster pump can be easily removed and even washed in a dishwasher.
The new development also offers enough space for comfortable depositing work. The flow rate for depositing is controlled electronically via the pump. Thus, everything from praline moulds to large shells can be deposited directly on the machine.•
