With the Inter-Praline congress (8 to 9 December 2021), the ZDS again is breaking new ground in order to react flexibly to the special requirements in these times: this year, the event will take place in digital form.
As with the face-to-face event, the digital version of the congress will, of course, feature exciting topics, high-profile speakers and networking, too. For example, Laurine Franchi from Cargill will talk in her presentation about how the long-term impact of Covid-19 will affect consumer trends, and what food and beverage manufacturers should consider for their future portfolio strategy.
Peter Désilets, Managing Director and Co-founder of Pacoon GmbH, will share the latest packaging trends as well as marketing and strategy examples from many industries. He will also highlight the latest developments in sustainable packaging and present approaches to strategy development and packaging development.
Aurélie Saglio, who works in research and development at Valrhona, will help understand the structure of ganache. Her presentation will focus on the role of ingredients in ganache texture, their interactions and, in particular, the role of cocoa. Attendees will dive into the microstructure of ganache and gain insight into the connection between ingredients, microstructure and texture.
To ensure that networking is not neglected at this year’s Inter-Praline, participants will be able to use a virtual lounge to make contacts with their avatar, move around in the room and invite people to a video call. The speakers will be available in the usual way after each presentation for questions and discussions.
